Theres a practice that many restaurant owners engage in unknown to the general public. If you run a restaurant in NYC, you have to make sure you pay your rent, taxes and liquor bill. When it comes to purveyors, many owners play a dirty little game. They run up a large bill over an extended period of time, and when the purveyor finally cuts them off, they just call the next purveyor on the list and start all over again. The owner will often make the orders using a dummy corporation and if there is legal action, they will just declare bankruptcy. The dummy corp does not have any ties directly to the corporation that actually runs owns the restaurant, so there is nothing the purveyors can do. Purveyors dont talk to each other, so its an easy game for the owners to play.
