Thinking healthy today - try this nutty wheat banana loaf. Bananas are high in potassium, really good for you! 3 egg whites (1/2 cup) 80ml skim milk, 60ml apple puree ( or mashed cooked apple) 1/2 cup brown sugar, 30ml canola oil, 2 ripe bananas, mashed 1 tsp vanilla essence, 2 cups nutty wheat flour 1tsp baking powder, 1/2 tsp bicarbonate of soda Preheat oven to 180deg. Line a 24cm loaf pan with baking paper and spray with a little cooking spray. Combine egg whites, milk, puree, sugar, oil, bananas and vanilla together in a bowl. Sift dry ingredients together in another bowl and fold into egg mixture until well combined. Pour batter into prepared pan and bake for 40 - 50 mins, or until a skewer comes out clean. Cool, slice and serve as is or topped with fresh banana and a drizzle of honey. Yummy and good for you!
