This is a favorite breakfast at my house this fall! Super easy and yummy. 2 eggs 1/2 cup oats- I use gluten free 1 cup pumpkin purée Cinnamon and sweetener to taste- I use SweetLeaf Stevia Blend everything and make pancakes as you normally would. It makes 8 pancakes- 2 servings. 21 Day Fixers- 1/2 red, 1 yellow, 1/2 purple. I top mine with 1/2 red of plain yogurt, maple syrup and more cinnamon to make 1 red.
