This is one of my favorite fall recipes: Butternut Squash and Apple Soup Recipe 2 tablespoons organic clarified butter 1 small to medium onion, chopped 1 medium Granny Smith apple, peeled, seeded, and chopped 1 32 oz organic chicken broth 2 teaspoons of sea salt ½ teaspoon of nutmeg 2 teaspoons of cinnamon 1 medium butternut squash, peeled and cubed Step 1: In a heavy (thick-bottomed) pot on medium heat. Melt butter; add onion and sauté for approximately 5 minutes or until onion is transparent looking. Step 2: Add apple, stirring while adding ½ cup of broth, cover, turn heat down and cook for 5 minutes. Step 3: Add the remainder of broth, salt, nutmeg, cinnamon, and squash. Bring to a boil. Reduce heat to simmer, cover, and simmer for 30 minutes or until squash has softened. Step 4: Use a blender or mixer to purée the soup. I hope you try it and enjoy. Jennifer Green
