On the boundaries of taste: the evolution of the Vietnamese foods in Poland Vietnamese restaurants in Poland produce foods for Polish customers, who demanded new tastes after social transformation and European integration in the 1990s and 2000s. They did not adopt the taste of the other but rather consumed the imagined others produced by those Vietnamese migrants: oriental, Chinese, Vietnamese, Thai, Japanese and even Turkish meals. Five-spice and spring-roll made their place in the new space of taste, together with rice. In the same time original vegetables are grown in Poland for the need of the Vietnamese migrants, and exported further to their country-mates in England. Most recently, Pho has arrived in Warsaw after success in other global cities. Interpreting foods as cultural capsules carrying cultural intimacy, this essay tries to identify the boundaries of taste and its dynamics between the two cultures brought in together by globalisation and economic migration.
