Today is the Winter solstice, traditionally the shortest day of the year. Winter solstice is a great time to plant garlic. Plant them pointy tip up, about an inch deep and aproximatley 15 cm apart. During the Summer solstice is traditionally a great time to harvest your garlic to increase its storing capacity. Garlic is fantastic to consume at this time of the year. Garlic is best served mashed or squashed with some olive oil and only very lightly cooked. This allows for the enzyme Allicin to remain at its highest and exert its antimicrobial, antibacterial, antifungal componants, boosting your digestion, immune system and keeping viruses at bay.
