Vegetable pulao: Ingredients: 3 cups Basmati rice, washed and drained 3 medium Carrots, peeled and cut into 2 cm. long strips 100 gms. Green Beans cut diagonally into 2 cm. long strips 1 cup Green peas (Matar), shelled or frozen 1 tsp. cumin seeds 2 Bay leaves 2 sticks (2 inch long) Cinnamon 3 Brown cardamoms 5 Cloves 4 tsp. Salt or to taste 3 1/2 cups Water 5 tbsp. Vegetable oil Preparation: Heat oil in a cooker. Add cumin seeds, bay leaves, cardamoms, cinnamon andcloves. Fry till cumin starts to splutter. Add carrots, beans and peas. Stir fry for 2 minutes. Add rice and fry for a minute or two. Add salt and water. Mix well.Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes.Remove cooker from heat. Allow to cool naturally. Open cooker. Serve hot :)
