We made this Saturday got 12 500ml jars yummmy Homemade Red Relish This is very good (used to eat it with everything) 5 cans of diced tomatoes 3 medium diced onions 1/2 head of celery diced 1 red pepper regular size diced 1 green pepper regular size diced 2 tbsp. pickling spice tied in cheesecloth or j cloth 1 cup brown sugar 2 cups vinegar No salt required as canned tomatoes contain salt Bring above ingredients to a slow bowl. Put on medium heat at first and then turn down to low once it starts to boil. Stir occasionally and keep on until it starts to thicken. I usually leave it on for about 4 hours. After 3 hours or so, remove pickling spice. Wash pickling jars, lids and caps in hot soapy water and rinse well. Place jars lids and caps in a pot with water so that the water can be seen at least 3/4 ways up the jar. Put thongs and soup ladle in water as well. Everything has to be sterilized. Turn on high to boil. Let them boil for about 15-20 mins. or so. You can also turn them down a bit. After chilli - sauce is thick enough, spoon into jars. With thongs, lift caps onto jars and screw lids in place, pressing on caps to release air. After bottled, let them stand on a tea towel so they wont mark the counter. The lids should start popping after a while. Keep at room temperature until ready to open then refrigerate. Enjoy!
