Welcome To TandJs Recipe Of The Week “Almost” Newfoundland fish cakes. This weeks recipe comes from a traditional Newfoundland dish for fish cakes. The “Almost” comes from substituting Basa fish for the salt cod normally used. Start by boiling 3 lbs. Of peeled potatoes in salted water until they are soft. Drain and return potatoes to the element you boiled them on but have now turned off (this is an important step to remove some excess moisture) for 3 minutes. Cool, and gently mash. While the potatoes are boiling, bake 1 pound of basa fillets brushed with a little melted butter for 12 minutes in a 400 degree oven. Cool fish and mash into small pieces. In a sauté pan, melt over medium heat ¼ cup butter and then add 1 large chopped onion. Cook until the onions are softened, then mix in 2 tablespoons of Nfld. summer savoury (we sell this at our store) 1 tsp salt, and 1/2 teaspoon black pepper. Remove from heat. In a large bowl combine fish, potatoes, onions, and one beaten egg. Mix together and form into small cakes about the size of the palm of your hand. Dip cakes into a small bowl with flour and place on plate which will go in the fridge for at least 1/2 hour to chill. Pan fry chilled cakes in oil, over medium heat for 5 to 6 minutes to brown.
