Well since you voted the Boricua plate, I did this plate today for my son Erick Esquilin...his wife is with her sister who had a baby n Im saying yes shes training, the beautiful woman thats going to make me a grandpa one day...hahaha...so this plate is delicious...beans made in chicken stock n sofrito, carrot, onions, celery, garlic, olive oil, salt n pepper...the rice made in clarified butter, onion, garlic, salt n white pepper n chicken stock...the chuletas season in garlic, salt n pepper, bit of vinegar set 4 hours, fry for color n placed in oven so they stay soft n moiste...Oh and the minepoux onion/garlic fry in clarified butter, then the carrot, celery and white wine, let it reduce and put chicken stock salt n pepper, let it reduce and put cold butter to melt...I also made a red sauce for the chuletas...hungry anyone?
