Will you help me with some research? I would love to hear about how your immigrant families translated dishes from their own cultural traditions to a North American context: what sort of substitutions of ingredients and techniques they figured out in the face of unavailability of ingredients, etc. Also, were there any North American/European dishes that your parents added to their repertoire once they had immigrated to the new world, but put their own ethnic twist on it?
