Yesterdays Click.... Kathirikkai Podi Adacha Kary (Stuffed Brinjal - South Indian Style) Recipe for the Podi (Powder) Oil - 2 tbsp Curry leaves - few Mustard Seeds - 1/4 tsp Channa Dal - 1 tbsp Dhaniya Seeds - 2 tbsp Dry Red Chilies - 2 (if you like it spicy you can increase the chilies) Fresh Grated Coconut - 1/4 cup Salt - to taste Roast the above ingredients in coconut oil (adds a wonderful flavor) until aromatic and grind to a coarse powder without adding water. Add salt. Wash and slit the brinjals, leaving the stem as it is. Now stuff the ground powder inside the brinjal and leave it for a few minutes. In a pan, add oil. Once the oil is hot, add mustard seeds and curry leaves.. Add the stuffed brinjals and toss it for a few mins. Sprinkle water and cook the brinjals covered for few minutes. Often check them so that the brinjals dont burn. Keep sprinkling water little at a time. The brinjals would turn soft and the skin colour would change. Remove off the flame and serve hot with Ghee Rice (the besht).....
