14 Month Mature Double Gloucester makes an amazing cheese sauce for a lovely hearty winter cauliflower cheese. Make up your sauce with milk, a little plain flour and then slowly add the cheese; grated or finely crumbled...(Its very crumbly!) Remove your cauliflower from the oven (around 200, cook till it begins to soften, not too much mind!) and broccoli if you like, also leek. Then add the sauce. Grate some red Leicester on top and pop it back in for 5-10 mins. Then sprinkle some crispy bacon on top unless your vegetarian. Warms your heart :-)
