2 cups all-purpose flour (or white whole flour for a more toothsome texture) 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 teaspoon salt 4 tablespoons butter, rough chopped 3/4 cup buttermilk Preheat oven to 500 degrees. In a large bowl, combine the flour, baking powder, baking soda, and salt. Add the butter and use your fingers to pinch it into the flour mixture. Once the butter is evenly dispersed into the mixture, add the buttermilk, using your hands to gather it into a shaggy ball. Turn mixture out onto a lightly floured surface, and gently press into a cohesive mound of dough. Flatten dough to a 1″ thickness, and use a 3″ biscuit cutter to cut the biscuits. Place biscuits, barely touching, in the center of a rimmed baking sheet. Place baking sheet in oven, and bake for 10 minutes, or just until the tops of the biscuits are a pale golden hue. Cool for 5 minutes and serve.
