200 Buckeyes Recipe 1 lb. butter (softened) 2 lbs. creamy peanut butter 2 1/2 lbs. confectioners sugar (2 lbs = 8 cups) 1 (12 oz.) pkg. semi-sweet chocolate chips (I usually have extra on hand...just in case) 1/2 stick paraffin wax Mix 1 pound of butter with 2 pounds of creamy peanut butter and 2 1/2 pounds of confectioners sugar. Roll into balls buckeye size balls, place a toothpick in the top (to use as a handle) and freeze until firm (approx 30 minutes). Dip into melted chocolate: 12 ounce package of semi-sweet chocolate chips with 1/2 stick of paraffin wax. Place the dipped candy on wax paper until they set. NOTE: If the frozen peanut butter ball starts to soften...just put back in the freezer until firm again. Enjoy...
