A few months ago, the kiddos and I went to The Mustard Seed. While there we had some of their Oatmeal chocolate chip cookies and we all loved them. I loved the fact that they were a much healthier version, so I asked them if they would share the recipe. And because they are totally awesome, they did. I just got around to trying it today (I used whole wheat flour as I do not own spelt flour) and next time I would add flax meal for that extra kick of healthiness. But, they are FANTASTIC, so I had to pass it along. Oatmeal Chocolate Chip Cookies 1 cup rolled oats 1/4 cup plus 2 tbs. canola, safflower, or sunflower oil 1/2 cup plus 2 tbs. maple syrup 1/2 teaspoon vanilla 1 cup chocolate or vegan carob chips 1cup spelt flour 1/2 tsp. baking soda 1/2 tsp baking powder 1/2 tsp salt 1. preheat oven to 350 2. process oats in a blender until the consistency of coarse flour 3. in a small bowl mix the oil, syrup and vanilla 4. in a separate larger bowl place ground oats, chocolate chips, 5. sift the flour, baking soda, baking powder and salt into the oat mixture 6. pour wet ingredients into the dry ingredients and mix with a spatula until everything well incorporated 7. scoop by heaping tablespoon onto well oiled or parchment lined cookie sheet, then flatten the dough with a cupo or glass (may need to be l;lightly watered as not to stick) 8.bake for 11 minutes 9. rotate the cookie sheets a half turn to ensure even baking 10. bake 5-6 more minutes until golden brown 11. Let cool and enjoy!
