A friend writes to me from Turkey, where he lives, and where he had lunch today in a restaurant in a small town on the Aegean: ...some quickly wilted wild radish leaves and spring onion wrapped in transparent flatbread and cooked briefly on a hot plugskaar. A dish of wilted mixed dandelion, fennel shoots, thistle shoots, sauteed, with garlic yogurt. Then a dish of wild asparagus (12 inches long and 3mm thin) sauted in olive oil and then eggs broken over... Thats just everyday spring cooking. Sigh...
