A repost since I couldnt cook what I wanted to last night for posting today due to the 9 hour power outage! #CrabStuffedPortobelloMushrooms #PaleoCrabStuffedMushrooms #GlutenFreeCrabStuffedMushrooms #DairyFreeCrabStuffedMushrooms Ingredients: 1 lb wild caught lump crab meat 1/2 yellow onion, diced 2 tsp minced garlic 3 pieces of gluten free/Paleo bread toasted 1 tsp lemon juice 1 tsp sea or celtic salt 2 T of grass fed butter, melted Extra Virgin Olive Oil (EVOO) or coconut oil Directions: Drain your crab meat completely. Put into a large bowl. Toast your bread, tear into bite sized pieces and put into large bowl. Mix all other ingredients together except EVOO in your large bowl. Wash your portobello mushrooms, and take out center stalk. Stuff your mushrooms with the mixture. Place on a lightly greased pan (see picture 1). Lightly drizzle your mushrooms with EVOO or coconut oil. Place into a preheated 400 Degree oven that is set on broil. Place your pan on the top rack and heat for 8 minutes. Check, flip your pan around if needed for even browning and cook another 8 - 10 minutes or until golden on top (see picture 2). Enjoy!
