ANOTHER BUSY NIGHT IN THE LIFE OF A WINE MERCHANT Last night I did a FOOD and WINE evening with Des and Amy at Flavours School of Cookery. I matched 7 wines to 7 dishes that Des created and gave a brief chat on why we taste wine, rather than just simply drink it, then we tried the wines with the food to see if why I matched those wines with that particular dish worked-thankfully they did! FOOD/WINE WAS:- 1/Pork 3 ways-quail scotch egg, sausage roll and pork pie matched with Pre Semele Sancerre Rose 2012 £14 2/Twice baked goats chees soufflé with parmesan and truffle veloute matched with Torre de Menegam Vinho Verde 2011 £11 3/Pan fried salmon with olive oil mash, scrumps and tartar sauce matched with Giustiniana Lugarara Gavi di Gavi 2011 £16.50 4/Chicken and black pudding ravioli with chicken veloute and fresh asparagus matched with Feurie La Madone 2011 £11 5/Lamb rump with brioche herb crust, pepper ratatouille with cauliflower puree matched with Chateaux Siuarac 2008 Lalande de Pomerol £23 6/Chocolate fondant with ice cream matched with Cazes Ambre 1996 Rivesaltes £14 1/2bt 7/Iced apple parfait with apple cider jelly and toffee apple matched with Ch St Roch Maury Rouge £15 50cl I went for a summery feel to the wines and matched a Rose with the pork and a Beaujolais with the chicken just to show that these work as well as the classic match of lamb with red Bordeaux.
