AVIYAL അവിയൽ Aviyal is a dish that has a unique place in a typical Kerala Cuisine. It is a thick mixture of a lot of vegetables and grated coconut. It is seasoned with coconut oil and curry leaves. INGREDIENTS : • Vegetables – 1½ kg (drumstick, carrot, long beans, elephant yam, golden cucumber, raw plantain, snake gourd, ivy gourd etc.) • Turmeric Powder – ½ tsp • Kashmiri Red Chilli Powder – ½ tsp • Green chili slit lengthwise – 5 nos • Raw Green Mango – 1 medium size, slice lengthwise • Salt – to taste • Curry Leaves – a few • Coconut Oil – 1 to 2 tbsp TO GRIND : • Grated coconut – 1 full coconut • Cumin seeds – 2 pinches • Green Chilli – 4 nos • Shallots – 4 to 5 nos METHOD OF COOKING : • Chop all the vegetables in medium length and cook it with just enough water, salt, turmeric powder and red chilli powder. • In a food processor coarsely grind grated coconut, cumin seeds, green chilies and shallots. • When the vegetables get cook, add sliced raw mango and mix well to make sure that all the vegetable pieces absorb the sourness of the mango. • Add the ground coconut mixture to the cooked vegetables and combine well. • Simmer for about 5 minutes and remove from fire. • Drizzle a table spoon of coconut oil, 2 slit green chillies and some curry leaves and serve warm. NOTE : The quantity of raw green mango shall be adjusted as per the required sourness. File Ref.: 98
