Along with the colder fall season comes pumpkin deliciousness! My mom gave me a pie pumpkin from the local farmers market when we were visiting last week! My first attempt at roasting the pumpkin was successful and super easy. I saved the seeds and roasted them to add to salads, and made the BEST pumpkin smoothie EVER! If you like pumpkin you MUST try this smoothie recipe! 108 calories for the entire smoothie mix 1/2 c fresh cooked pumpkin 1/2 banana 1/2 cup vanilla almond milk 1/4 tsp pumpkin pie spice 1 packet stevia in the raw 1/4 tsp cinnamon 1/4 tsp vanilla extract 10-12 ice cubes Blend all together and enjoy pure deliciousness!
