Although I am now on my post-Christmas diet, before Christmas I decided to make fudge (regular sweet type vanilla Fudge) with a cinder toffee (Crunchie) topping. The cinder toffee came out great. The fudge on the other hand made a really good impression of treacle toffee even though I followed the recipe to the letter. It tasted superb. A bear in mind that I had enough cinder toffee here and enough treacle toffee to feed the 5000 I gave loads away but then the day before yesterday, I tried to make fudge again. Well it didn’t come out like treacle toffee but it didn’t come out like fudge so I left it in the pan overnight to contemplate. I did a bit of searching on Google of how to resurrect fudge which has gone wrong side a bit more of a play with it with heat and whisk in decided that it was a disaster so I decided that as I was going to be on a sugar-free diet for the whole of 2015, I should put it in the bin and if I need fudge in future for a sugar hit, it was going to be cheaper to buy it even though anyone it was bought fudge will realise that it is horrendously expensive. So the whole batch went into the kitchen swing bin. Fortunately (or not as it transpires) I just put a new polythene liner in although there was some detritus at the bottom, it was largely clean (very important as you will read shortly). Anyway, the whole of the fudge splurged into the bin and became scrap apart from some quite large splashes which solidified on the sides. And that was the end of it… Or so I thought. My “softball” testing samples (now cold) were still around so I decided to pop the sugary lumps in my mouth. Bugger me, they tasted just like fudge, and the consistency was just as it should be. So (yes I am ashamed to say) I picked some of the pieces which had solidified on the bin liner (the three second rule didn’t apply here!) And had a little bit of a chomp. Bloody hell, real fudge made by me. Unfortunately (or fortunately for my diet) the mass of it was beyond redemption in the bottom of the bin. Yes, I’ve still got ingredients left for another couple of batches but the problem is that whereas in the first instance, I didn’t know what I did wrong, now, I don’t know what I finally did right! It’s also worthwhile mentioning that by the time I bought a sugar thermometer and the necessary ingredients and a silicon spatula and a suitable nonstick tray to mould the fudge in, I could probably have bought several years supply of proper fudge Watch this space.
