Always a fan of the long epics, here. Rime of the Ancient Mariner, Keeper of the Seven Keys, King For A Thousand Years, Sign of the Cross (Avantasia or Maiden, both pretty nice), Sacred Worlds... When I get tired of the simpler verse-chorus-verse songs, I retreat into the longer material where every single element of the song gets its time to grow and be used to its full extent throughout. When done right, of course: not every band is as capable of writing a long epic in the most coherent manner, and Manowars Achilles: Agony And Ecstasy In Eight Parts at times feels more like a really long drum solo besides its main theme.
