I was asked for this recipe which I got from a very good friend. Over the years she has used this receipe to make Butter Brickle and Potato Chip cookies for her loved ones as they visit during the holidays. My favorite is the Potato chip. I am sure you can add additional flavors to the basic cookie to fit your loved ones taste. Basic Sugar Cookie Heat oven 350 degrees Mix together in medium bowl: 1 1/2 cup Sugar 1 Cup Oil Add: 2 eggs 1 T Vanilla Mix well Add: 2 cups self rising Flour mixing in a little at a time For Potato Chip cookies: add 1 1/2 cup crushed potato chips for lemon cookies, add 2 teaspoons of lemon extract Put dough in balls on greased cookie sheets. To make them consistent, I use a melon scoop or a teaspoon measuring spoon. Bake 15 -17 minutes
