And something thats heart warming every single time I pull one out of the oven - this ones a naturally leavened (wild yeast), slow ferment rustic bread made from a San Francisco culture and has 20% of 10 grain multi-grain flour. This time around, I fooled around with the scoring and let the crust get to a chestnut colour for that irresistible depth of flavour. Couldnt resist the urge to slice it - crackling crust and a moist, soft crumb with a complex flavour on the palate from the slow ferment and the diverse grains. Dinner will be fulfilling. :)
