Another Christmas Treat from my kitchen to yours Coconut Agar Agar Serves 6 1 fresh or frozen pandan leaf (optional), cut in half ¼ cup agar agar ½ cup sugar 1½ cups can coconut milk 3 tablespoons evaporated milk 1 cup chopped fresh pineapple 1. Bring 3 cups water and pandan leaf in a medium saucepan to a boil over medium heat. 2. Separately, dissolve the agar agar in ¼ cup hot water. Stir the mixture to the boiling water and cook, stirring for 2 minutes. 3. Add the sugar and coconut milk and stir until the sugar dissolves. Bring just to a boil and immediately remove from heat. Discard the pandan leaf. 4. Add the evaporated milk and stir well. Pour the mixture into a glass baking dish. Set aside to cool thoroughly before chilling in the refrigerator for at least 2 hours. 5. Cut into squares and serve cold with fresh pineapple.
