Another yummy healthy snack thanks to Tracy G. I tried these today and they were yummy. Zuchini balls. Pre heat oven to 220. Mix two grated zucchinis, 1 egg, a tablespoon of gluten free flour, a tablespoon of grated Parmesan, a pinch of salt and pepper until you have a uniformed consistency. Roll into balls and bake on baking paper for 20 minutes! Serve with a little Greek yoghurt or tzatziki. delicious
