As you know, we like to be close to our customers. Your business is very important to us! Please take a moment to read our response to a customer who was kind enough to take the time to post a balanced review of mac-O-licious. We appreciate her feedback, as it gives us a chance to learn and also to understand what is most important to our customers. Customer: I got some five-cheese to go with lobster topping. The service was great and the mac was very yummy, but I got very little lobster for $3.50 extra so I found it to be quite pricey overall. Will try eating at the restaurant next time to see if its a better value. macolicious replied: Thank you so very much for taking the time to share your feedback. We are super thrilled that you enjoyed our service and that you thought our macncheese was delicious! Our 5 Cheese is one of our most popular dishes! Regarding the price, I do appreciate your feedback as well. One of a few reasons many restaurants go out of business is because they fail to price their dishes to adequately cover the cost of the food and other expenses involved. The industry standard targets for food costs (to remain solvent as a business) is 20-30%. In full disclosure,,our business is running a bit over 30% on food costs. We put one ounce of Lobster in our Lobster Topping. That costs mac-O-licious $1.24, yet we dont sell it for $3.74 (which is 30%) We have a 35% cost on it when we sell it for $3.50. So, we currently run the risk of not having enough in the 70% to cover rent, salaries, utilities, taxes, etc. Not optimal for a business that hopes to stay in Valley Village for the long haul. Suppliers have offered us Lobster Blends for a lower price, but we choose to use pure Lobster. Running a restaurant is tough, because the perceived cost and value to the consumer doesnt always map to what it takes to cover the bills. I understand and appreciate that... which is why I feel it is important to share. In the end, we hope to be able to serve good food, using great ingredients with excellence for a long time. We are always looking for less expensive providers to ensure our costs stay as low as we can. We welcome any referrals! Finally, your repeat business makes all of the difference in the world.
