Asparagus is one of the most alkalizing foods! Dairy Free Cream of Asparagus Soup pic & recipe by Juli P. Blended potatoes are what gives this the creamy texture, no cream! 8 cups vegetable stock 3 bunches of asparagus, washed, bottom 1/3 discarded, cut in 2 inch pieces (put 1/2 cup aside to be used as garnish) 1 big white onion chopped 2 leeks washed and rough chopped 3 big garlic cloves chopped 4 medium potatoes peeled and cubed 3 tablespoons butter, 3 tablespoon olive or coconut oil 1/2 teaspoon sea salt 1. Heat oil and butter in large skillet 2. Add onions, leeks and potatoes, cook for 15 minutes, stirring often 3. Add asparagus, garlic and salt and cook for an additional 10 minutes. Stirring often. 4. Add stock, bring to boil, then reduce heat to simmer for 15 minutes. 5. Use an emersion blender to blend all veggies and turn into a smooth soup. If you dont have an emersion blender, you can put soup into blender in batches and blend. Soup will have to cool a bit before doing that. Garnish with a swirl of olive oil, pieces of asparagus.
