BERRY TAPIOCA PUDDING spray oil 1 1/2 cups of white sugar 1 cup tapioca 2 x 400ml cans (light) coconut milk 2 eggs mixed berries (I used FROZEN berries 3 x 75 g satchels + 1 x 75 g to serve) OPTIONAL: shredded coconut to serve. Spay crock pot with oil, add sugar, tapioca and coconut milk, stir with a wisk, cover and cook on LOW for 2.5 hours (until tapioca is transparent) (Ive used a tea towel for unwanted extra liquid) Place eggs in a bowl, wisk, then add 1 cup of HOT/COOKED tapioca mix, stir with wisk continuously, add egg mix to the tapioca in the slow cooker, cover and cook on LOW for a further 45 minutes. Turn slow cooker off, stir in berries, let stand for 30 minutes. OPTIONAL: toast the shredded coconut and add on top with extra berries.
