Books Here---> amongfriends.us/GeorgeStella.php -------------------------- BLACKENED PORK CHOPS Recipe by George Stella / StellaStyle Prep Time 5 min / Cook Time 8 min / Serves 4 SHOPPING LIST 1 pound pork chops, 4 chops about 4 ounces each and less than 1 inch thick 2 tablespoons Blackening Spice, recipe below 4 sprigs fresh cilantro, optional for garnish directions 1. Turn your overhead exhaust fan on and place the oil in a large cast-iron skillet or heavy pan over high heat until almost smoking hot. 2. Season both sides of the pork chops liberally with the blackening spice, place in the skillet and cook for about 3 or 4 minutes on each side until well seared and cooked through. Serve garnished with fresh cilantro if desired. George’s Tips: These Cajun chops go perfect accompanied by collards or spinach with roasted peppers; just add fresh or a jar of red pepper strips, butter, salt and pepper to a bag of frozen collards or spinach and microwave! This spice mixture is so chock-full of flavor, and since all you have to do is throw everything into a bowl and shake together, you’ll most certainly find yourself using it all the time! With it, I’ve been making the most excellent blackened chicken, pork chops, and seafood for decades now. Literally, it has been a family staple since the early 80’s. SHOPPING LIST 5 tablespoons kosher salt 5 tablespoons paprika 1 tablespoon dried thyme 1 tablespoon black pepper 1 tablespoon garlic powder ½ teaspoon cayenne pepper ½ teaspoon ground white pepper 1. Mix all ingredients together. 2. Store in an airtight container or empty spice canister. Shake well before each use. HELPFUL HINTS Since this recipe makes about 1 cup, you can always double or triple it and keep plenty around for easy access during a busy workweek. It’s great for grilling, baking, or pan-frying anything, from poultry to your favorite vegetables.
