BROAD STREET MINISTRY JOB POSTING POSITION: Sous Chef REPORTS TO: Executive Chef DATE: 10/2014 _____________________________________________________________________ GENERAL DESCRIPTION: This position is responsible for overseeing the prep aspects of Broad Street Ministrys Culinary operations, which primarily entails the provision of meals for the Hospitality Collaborative, a program that provides hospitality, social services and meals to guests in need, such as men and women who are experiencing homelessness. In 2013, BSM served more than 51,000 meals, a number that is expected to grow significantly in the future. ESSENTIAL FUNCTIONS: Broad Street Ministry (BSM) is faith-based nonprofit organization that addresses the needs of vulnerable individuals and families, extends inclusive hospitality, fosters community, cherishes creativity and works for a more just world through civic engagement. The Sous Chef will take part in the production and turnout of up to seven meals per week serving 200-450 guests per meal, banquet style as well as additional meals for other programs on an as needed basis. The Sous Chef will be responsible for helping the Executive Chef develop varied menus of delicious meals that meet the nutritional and budgetary criteria of BSM. The Sous Chef will oversee a part-volunteer staff that is responsible for plating, expediting and serving the meals. The Sous Chef will be contributing to menu planning that maximizes production efficiency, economy and guest satisfaction, but with the flexibility to incorporate food donations as available. The Sous Chef will also be responsible for helping develop standardized nutritious and delicious recipes on a large scale that can be executed consistently, efficiently, and to the high standards required by BSMs mission of radical hospitality. The Sous Chef will train and supervise kitchen staff (volunteers/utility persons) as needed and ensure standards of quality, consistency, cleanliness and professionalism. The Sous Chef will help oversee routine maintenance of the facility and coordinate repairs as necessary. The Sous Chef will also help manage inventory, receiving, proper food rotation, integration of donated food and making sure that the kitchen is kept to Serve Safe Standards at all times. EDUCATION, EXPERIENCE AND SKILLS REQUIRED: Candidates should be a graduate of culinary school or have at least three years of kitchen experience, including one year of banquet experience. Candidates must be willing to work weekends and evenings, be highly self-motivated and adaptable and have creative problem solving skills. It is also important that candidates have strong organizational skills, the ability to work with volunteers and to relate to people from diverse backgrounds.
