Balsamic Roast Beef, Pastrami Corn and Onion, Wraps dipped in Au Jus sauce. 4 lb roast 1 cup beef broth 1/2 balsamic vinegar 1 T Worcestershire 1 T soy 1 T honey 1/2 teaspoon red pepper flakes 4 minced garlic cloves Sear roast all sides using deep skillet with lid using oil of choice. Mix other ingredients together and pour over roast. Put lid on and cook 4 or more hours at 250°F in oven. The last hour I turned up to 350°F Because I was in a hurry. I let cool in skillet with lid on until it could be handled. Shred with 2 forks in separate container and add about 1/2 cup of Au Jus. 1 bag of frozen corn Butter Chopped onion 2 T tomato paste Some chopped Pastrami ( just had some left over) Melt butter and put onion in and saute until soft. Add frozen corn and cook. Add pastrami and cook. Add tomato paste and cook. I added about 6 T of the Au Jus and a little water. You want the corn moist but not dripping. Take a flour tortella spread sour cream or mayonnaise on it. Put shredded beef and corn mixture and fold. Dip in the Au Jus sauce. It is good! You could add bell pepper to the mixture as well. :-)
