Banana, fresh ginger, chocolate and mixed spice cake with Christmas orange icing x Recipe Before you start grease lightly your SC, put 2 dessert spoonfuls of water in the bottom then place your cake case on the top, the water stops the sides from burning, turn the SC onto high to warm up 225g self raising flour 1/4 tsp bicarbonate of soda 75g of butter or flora cuisine (I use flora cuisine as it cuts out the creaming/folding etc) 110g light brown sugar 2 eggs 1 ripe banana 2 tbsp dark treacle 1 tbsp of cadburys drinking chocolate (add a tiny bit of hot water to make a paste) 1 crumbled Cadburys flake 1 thumb size piece of fresh ginger chopped finely 2 tsp mixed spice (care here dont get the wrong one, there is one for savoury and one for desserts) 1 tsp of cinnamon Place the entire lot in a bowl and mix (if you are using butter use the creaming in method), pour into the cake case, put a tea towel under the lid (this stops the condensation from falling into the cake mix), cook for around 2 hours - IMPORTANT - do not peek before 1 1/2 hours otherwise the cake will sink, after 1 1/2 hours insert a skewer into the cake, if the skewer comes out clean the cake is ready, if it is still a bit sticky continue to cook but check with the skewer every 10 mins. Remove from SC leave to cool. Icing - 150g of icing sugar and one fresh orange - squeeze the orange into the icing sugar until the acquired consistency, spread onto the cake x
