Barm or Barnbrack is a traditional Irish bread containing fruit. It is customary to eat this bread in the autumn time particularly coming up to Halloween. Here is the recipe to try out for this year’s harvest celebrations. INGREDIENTS • 500g of flour • 120g sugar • 1 teaspoon of baking powder • 1 egg • 1 tsp. of all-spice or mixed spice • A pot of hot Irish Tea • 200g sultanas METHOD Make the tea in a bowl, the equivalent of about 2 mugs of tea. Add the sultanas to it and allow to soak for 10 minutes. Add the sugar and egg to the sultanas and sift in the remaining dry ingredients. Mix all the ingredients together. Place the mix into a 7 round baking tin or similar and bake in a preheated oven at 170°C for 30-35 minutes minutes. 10 minutes before it is finished cooking, remove from the oven and brush on a sugar paste of sugar with a little water added. Replace into the oven and finish cooking. Cool on a wire rack and serve with a nice cup of hot tea ;-)
