Beef taco tex-mex casserole for dinner! Decided Id try a recipe I semi-invented in my head... Ground beef sauteed with a red pepper, a pasilla pepper, half an onion, 2 roma tomatoes and some spices (ground cumin, ground chili, smoked paprika, garlic, and salt, I just kinda eyeballed em but Id guess maybe a tbsp of each except the cumin, which was 2 pinches, and the garlic, which was like 1 1/2 tbsp) and layered it with my homemade refried beans and cheese, and topped with corn tortillas and more cheese.
