Ben ate squash tonight!!! Okay, let’s start at the beginning. Ben likes waffles. Ben likes homemade waffles, made from the store brand waffle mix I buy at Shop N Save, made fresh (not frozen or in the refrigerator), in a round waffle iron. Just like every other food he likes, it has a bunch of conditions. He likes to make them with me. We put in two cups of mix, 1 ⅓ cups of milk, one egg, and then it calls for 2 tablespoons of oil. I don’t use a lot of oil when I bake. In fact I have found out that using applesauce as a substitute works a lot better for many things. We have been doing this trick for years, waffles included. When Ben was younger I would buy babyfood and replace the oil with various veggies and/or fruits. But in one batch of waffles, he would eat one out of 8. So I figured applesauce was good enough (it was a lot cheaper to buy a big container). I would make the rest of the batch and someone else would have to eat them anyway, because he wouldn’t eat them leftover. Recently two things happened. Ben eats TWO waffles when I make them. I got a brain and realized that if eaten in a day or two, I could keep leftover waffle batter in the refrigerator. Now Ben can have waffles almost every day! He eats ¼ of the waffle batter at a sitting. SO! I bought babyfood again. Tonight I put squash in his waffles. Okay, I stretched my first statement a LITTLE. But in our little world…. BEN ATE SQUASH TONIGHT!!!!
