Black Bean Soup 6 cans Goya Black beans, rinsed thoroughly 1 medium onion, diced 2 small or 1 large can Rotel diced tomatoes with Chiles 4 cloves garlic, minced Salt, pepper and Ground Cumin, to taste. In large pot, sautee onions in olive oil. When transparent, add garlic and 1/3 of beans. Mash beans. Add the rest of the beans and Rotel. Add water, using the Rotel cans, 2 small or 1 large. Add salt, pepper and cumin ( I am a bit heavy-handed when it comes to Cumin- you may also want to add cilantro). Stir well and simmer for 30-45 minutes. Serve with sour cream, shredded cheddar cheese and dices avocado.
