Breakfast stuffed Bell Pepper What You Will Need: 1 green bell pepper top removed and seeds removed 1/4 tomato diced 1/5 C red onion 1/3 C mushrooms washed, and sliced 1/4 C spinach 1 large egg 1/2 clove of garlic minced (1/3 tsp garlic powder is fine). 1/2 ounce of cheddar cheese if you eat dairy Salt and pepper to taste Pre heat oven to 400 In a bowl mix all the ingredients together except for the bell pepper and cheese. Pour veggie mixture into the bell pepper and cover with the cheese. On a cookie sheet cook for 20 minutes or until the cheese is golden brown *serving is one pepper With cheese- 172.8 cal 9.8 G fat 9.4 G carb 3.3 G fiber 12.8 G pro 4.1 G sugar Without cheese- 117.8 cal 5.3 G fat 9.4 G carb 3.3 G fiber 9.3 G pro 4.1 G sugar * These are so easy to make. The different combinations you could do are endless. I dont eat dairy that often so I stuff mine with bacon ;-)
