Brittanys Snickerdoodle Mini Muffins -Grain free, Gluten free, applesauce muffins. Seriously why didnt I discover this Snickerdoodle nut butter by @buffbake months ago! Makes about 12 mini muffins or 6 full size. Nutrition Facts 1 mini Cal: 80g Fat: 4.6g Carb: 7g Sugar: 5g Protein: 5g Applesauce: 2 green apple 2 tablespoons lemon juice Muffin Mix: 1/2 cup snickerdoodle almond butter by @buffbake 1/3 cups applesauce 1 teaspoon vanilla 2 tablespoons agave nectar or any sweetener you prefer, honey, srevia ½ teaspoon baking soda 1 teaspoon apple cider vinegar Cinnamon Frosting 1/2 cup cinnamon bun ShredZ protein (only found on my site at Brittany.getshredz 30% off) Few dashes of water First we have to make our homemade applesauce. Peel, core, and cut up your green apples, then squeeze two tablespoons of fresh lemon, and one tablespoon of water. Place on high heat and cover as soon as it comes to a boil lower heat and let it simmer for 10 minutes. After this is done let them cool then place in a food processor. 1. Preheat oven to 375º degrees F. 2. Place all muffin ingredients into a blender or food processor. 3. Blend until well mixed. 4. Pour batter into muffin tin you can use a regular size muffin tin or mini. I also cooked them with and without liners and noticed they came out better with the muffin liners. 5. Cook time: 15 minutes for full size muffins and 10 minutes for mini muffins. Then top with your Cinnamon bun frosting.
