Busy Cooking a new dish. I call it Ala-Mexi Cowboy Cornbread its got sausage, black beans, creamed corn, fresh jalapeno and Rotel in the base! On the side --Potato Rustica Soup with sausage and baby kale. And as soon as I finish the dishes... Ill be baking some chicken thighs and sweet potatoes with fresh crispy fried plantains as a garnish (like they do in them fancy restaurants..lol) , and a side of sauteed fresh spinach with tomato and pepitas, with an added fresh squeeze of lemon and sprinkle of Romano! Im getting ahead on my cooking, for I expect a very busy week selling cars! We will eat well, I guarantee it, working 11 hours a day or no... Im taking my sister Allison Tinney s advice and doing all my cooking today for my next two late nights, and packing lunches for me and John too!
