Busy day! Made a crockpot full of beef stew, all fresh ingredients, 2 pound loaf of bread (in the machine). Then made 15 dialysis friendly breakfast burritos for my hubby. Made with bell peppers, leached potatoes, onions made into country potatoes, a dozen eggs scrambled, placed into flour tortillas and topped with colby and Jack cheese, then all rolled together and wrapped in wax paper sheets. Then I made another 11 breakfast burritos with bacon, fried potatoes and another dozen eggs onto flour tortillas topped with corby and Jack cheese all rolled up in wax paper and ready for the microwave in the mornings for Makayla and I. Plus I did 5 loads of laundry, and ran to walmart for a couple of thing. I am exhausted!
