Busy week? We have sports almost nightly, so having at least a fraction of dinner prepared ahead of time is crucial to healthy eating for us. This morning, my 7 year old & I stuffed handfuls of basil leaves into our food processor, along with half a dozen cloves of garlic, and a handful of pine nuts. We added extra virgin olive oil, chopped it up in the processor, and froze a large container full to the top with pesto sauce..... a few scoops plus seasoning and a simmer, toss with pasta or potatoes or veggies & you have a healthy meal.
