By Karen Crawford Mitchell 1 cup softened butter1 cup white sugar1 cup packed brown sugar2 eggs1 teaspoon vanilla extract2 cups all purpose flour1 teaspoon baking soda1 teaspoon salt1 1/2 teaspoons ground cinnamon3 cups quick cooking oatsCream butter, white sugar, & brown sugar together. Beat eggs & vanilla. Combine flour, baking soda,salt, & cinnamon. Mix in oats. Chill dough for an hour (optional). Preheat oven to 375. Drop walnut sized balls & place 2 inches apart. Flatten if desired. Bake 8-10 minutes & cool.
