CHAR COAL - selecting the right kind of charcoal is very important. Make sure its not too heavy or too light. If its too heavy that means there is lots of moisture in it and it will take long time to light up and also create in neccessry smoke. If its too light and small it burns too fast and uneconomic. A medium size and medium wight coal is the best. Dont put too much coal in d grill as it will burn the meat when it reach high temperature. sprinkle some dry herbs n spices like rosemary, cinnamon stick and cardamom as this helps to get some nice subtle flavors in d meat.
