CHICKEN SHISK TAOUK RECIPE: simply marinate 3 chicken breasts cut in strips with 2 tbsp of harissa paste and juice of 1/2 a lemon if using the big one or a whole lemon if using smaller one. add salt to taste, because there is salt already in the harissa paste.put in wooden skewers. n drizzle with some olive oil before grilling in a grill pan. marinate for 2 or more hours. GARLIC SUACE (Like AL-BAIKS): puree 3 to 4 garlic cloves with 1 green chilli, 4 tbsp lemon juice, 2 tbsp cold water n blend to a fine consistency. add 1 medium size boiled potato to the mixture n blend again add 4 tbsp oil, n salt to taste. adjust the consistency with more cold water if the sauce is too thick. allow to rest in fridge for 2 hours or more for flavours to blend. HARISSA PASTE: soak 10-12 dried red chilli pepper (degghi mirch preferred) in hot water for 30 minutes. drain remove stems & seeds. in food processor combine chilli peppers, 3 cloves garlic, 2 tbsp olive oil, 1 tsp ground coriander, 1 tsp ground caraway seeds (ajwain), 1/2 tsp cumin powder, 1/2 tsp salt, process to a smooth paste. keep refrigerated in a jar and drizzle some oil on top to keep it fresh
