CHICKEN TORTILLA SOUP I love chicken tortilla soup. Its a nice, hearty soup that warms the soul during cold weather, but heck, I love it any time I can get it. If chicken tortilla soup is on any menu, my eyes light up and I HAVE to have it. Cracker Barrel used to have the BEST, but they stopped offering it. The wait staff says people are always asking about it, but so far CB hasnt stepped up to plate to put it back on the menu. Bad Cracker Barrel. So, Ive made my own, and its pretty darn good. Of course the heat level can be adjusted according to what kind of salsa you use; hubby likes it with mild salsa, I like it with hot. At first glance it looks difficult because there are so many ingredients, but a lot of them are just opening a can of something. So here goes: First off, the chicken. You can buy and cook a couple of chicken breasts if you so desire, but I just buy a rotisserie chicken thats already roasted and shred the meat. This isnt a huge pot of soup, so double the recipe if you want a big pot. 1 1/2 tablespoons of butter 1/2 teaspoon minced garlic 1 small onion, finely chopped 1 tablespoon all-purpose flour 21 ounces chicken broth, of about a can and a half. 2 cups Half & Half (or skim milk if you want to cut down) 1 can cream of chicken soup, or less if dont like it that much 1/2 cup salsa, to your taste 1 rotisserie chicken 1 small can black beans, drained. I use about 8 ounces 1 can whole kernel corn, drained. Again, about 8 ounces. 1 teaspoon ground cumin 1 ounce fajita seasoning tortilla chips Over medium heat, melt the butter, and saute the onions and garlic in the butter for about five minutes. Add the flour and cook, stirring, for 1 minute. Pour in the half & half, and chicken broth. Next come the cream of chicken soup, chicken, beans, corn, salsa, cumin, and fajita seasoning. Simmer for 15 minutes. Serve with crumbled tortilla chips on top, shredded cheese of your choice, maybe some sour cream. Dang, my mouth is watering. I need a rotisserie chicken . . . -- Linda H.
