CREAM OF CELERY SOUP 2 bunches of celery chopped, leaves and all 1 med onion chopped 2 cloves of garlic chopped 2-4med potatoes diced 250ml of whipping cream 2Tbsp of olive oil 2cups chicken broth In large pot, add oil onion and garlic, cook until onion is soft. Add 1/2 of the celery and all of the potatoes, cook 5 mins. Add chicken stock or broth, bring to boil, turn down heat to med cook for 1/2 an hour. Mash or blend celery and potatoes in pot, add remaining celery and cook till half done. Turn off heat, add cream mix well and serve.
