Caramel Oatmeal Bars 1 cup unsalted butter 2 cups packed brown sugar 2 eggs 1 tsp baking soda 2 1/2 cup flour 1 cup quick oats 30 caramels -not the hard candies- OR you can make your own caramel sauce like I did: 2 cups brown sugar and 1 1/4 cup of 35% cream. Boil for 5 minutes and once the time is up, take it off the heat and stir for about 1 minute. 1. Preheat the oven to 350 degrees F and grease and flour a 15 x 10 x 1 inch pan. 2. In a large bowl, beat the butter for 30 seconds and then mix in the brown sugar until combined. 3. Beat in the eggs, one at a time, beating well after each addition. 4. Add in the vanilla and baking soda until combined. 5. You can try beating in as much flour as you can with the mixer or you can do it by hand (I did it by hand). Once the flour is incorporated, add in the oats. 6. Spread the batter evenly into the prepared pan. 6. IF using the store bought caramels, in a medium saucepan, melt them with 3 Tbsp of milk until smooth. 7. Once you have your caramel sauce, drizzle in all over the batter (use a wooden spoon to spread it evenly if you have to). 8. Bake for 20 to 25 minutes. When the time is up, cool completely before cutting into squares because the caramel sauce needs to set. Enjoy :)
