Carrot Cake Recipe: Carrot Cake 2 cups sugar 2 ½ cups flour 1 tsp cinnamon 1 tsp salt, 2 tsp baking soda 2 cups finely shredded carrots Mix this (w/spatula or lg spoon) together in large bowl ADD: 2 eggs 2 tsp vanilla 1 cup vegetable or canola oil 8 oz (1 cup) unsweetened applesauce Mix w/mixer till smooth. Can add chopped pecans if desired, or just top w/nuts after frosting. FROSTING 2 sticks softened butter 1 8oz pkg softened cream cheese 4 cups powdered sugar, 1 tsp vanilla ¼ cup Heavy whipping cream, 1 Tablespoon Lemon juice Cream butter, cream cheese then add sugar vanilla & cream. The key to this frosting is to whip till Fluffy 3-5 minutes……..melts in your mouth! (If not thick enough add more powdered sugar)
